Department Summary
Hospitality, Travel and Tourism offers a broad range of courses in cooking, hospitality, tourism, travel and food safety. Courses range from Certificate II level through to advanced diploma, and include apprenticeships, traineeships, VET in Schools and VCAL programs.
Food and beverage service and cookery programs are delivered in the department's open-to-the-public student training restaurant, Richards Restaurant.
The department also offers customised training for industry clients and a range of short courses.
Our graduates gain employment in companies such as Qantas, Virgin Blue, Student Travel Association, Village Gold Class cinemas, Visitor Information Centres and a range of hotels and restaurants.
Food Safety Unit
Since 1994, the department's Food Industry Training Unit has delivered nationally accredited programs for the food industry. These courses are designed in consultation with Environmental Health Officers and are designed to meet the requirements of food safety laws in Victoria. The Food Industry Training Unit tailors training to meet industry requirements.
The Training Unit offers Certificate II and III in Food Processing, Food Safety Training and consultancy.
General entry into the Food Industry
The Follow Workplace Hygiene Procedures (THHGHS01B) training session runs for three hours and covers basic hygiene and sanitation.
Food Safety Certificate
This course comprises three units of competence and designed for anyone wanting to meet Victoria's food safety law requirements. Customers may enrol into one or more competencies according to their individual requirements.
The course is practical and delivered at our Essendon, Broadmeadows, Richmond and Moreland Campuses. Some units are delivered in Vietnamese on an as need basis.
RPL applications are given consideration.

Apprenticeships and Traineeships
Apprentice cooks can enrol at any time of the year. We offer places in Levels I, II and III, and there is usually no waiting period.
Our in-house training restaurant, Richards Restaurant, is open to the public, so students obtain hands-on real life experience in all aspects of cooking, from buffets to a la carte menus.
Apprentices must be registered with the Office of Training and Tertiary Education (OTTE). To be registered, you must contact an Australian Apprenticeship Centre (AAC) to ensure all required documentation is completed and submitted. Traineeships cover a range of job-specific and broad-based skills and are designed to prepare students for careers in cooking, food and beverage operations, accommodation services, food processing or tourism.
A Hospitality, Travel and Tourism Department representative will visit your workplace and establish, with your employer, whether training is best provided on or off-the-job. An individual training plan will be developed to suit all parties. If there is a substantial part of training to be delivered on-the-job, Kangan Batman TAFE staff will make regular contact to support the on-the-job training, and mentor and assess you.
VET in Schools
The VET in Schools program is a government initiative that offers students the chance to undertake vocational studies while completing Year 11 and 12. They can undertake the vocational studies either at their school or a registered training organisation such as Kangan Batman TAFE.
The Hospitality VET in Schools program can improve the students' employment opportunities and provide a valuable insight into the hospitality industry.
Students who complete a VET in Schools program alongside their normal VCE can continue on to further study, such as a Certificate IV or Diploma.
Hands-on Practical Learning
In all of our accredited courses, we ensure our students receive practical hands-on training and adequate work experience during their course.
Our hospitality and cookery students learn in our on-campus open-to-the-public restaurant, Richards Restaurant.
Our tourism and event management students practice their skills by hosting their own travel expo. They also provide support to various industry and community events such as the Australian Tourism Exchange Volunteer Program, Melbourne 2006 Commonwealth Games, Broadmeadows Town Festival, and the AG Ideas Design Students Conference.
Approach to Tourism/Hospitality Advanced Diplomas
The unique teaching approach used in our tourism and hospitality Advanced Diplomas focuses on developing the students' entrepreneurial and business skills, and increasing their employability by improving their understanding of the tourism/hospitality industries.
All second year Advanced Diploma hospitality and tourism students are encouraged and supported to enter the Developing Tourism Leaders Awards, sponsored by Melbourne Airport.
The competition encourages and motivates students by providing them with the tools to spot new business opportunities, attract capital and commercialise innovative technology.

On successful completion of our Advanced Diploma, students may be considered for a position at La Trobe University, where up to 18 months' credit may be given towards degree courses.
Customised training for organisations
The Hospitality, Travel and Tourism Department has considerable experience in the development of customised training courses in response to identified industry needs and/or in response to specific requests from organisations.
All of our accredited courses (see Course Offering) can be delivered in whole or in part, and can be modified to meet an organisation's specific needs.
Training and assessment can be delivered on or off-the-job. Flexible delivery is another option in many cases, through the use of online or CD-ROM applications.

Our Staff
The Hospitality, Travel and Tourism Department has a team of motivated, skilled and dedicated teachers who ensure your time at Kangan Batman TAFE provides you with the best possible opportunities to succeed in your chosen career.
All of our teachers have appropriate teaching qualifications and many years' experience in the tourism, hospitality and food industries. They come from a range of professional positions within the industries, including restaurants, airlines, travel agencies, major hotels, retail and food service outlets and food processing.
Achievements and awards
Department awards
- Outstanding Group Contribution to Tourism and Hospitality Training Award (2003), presented by Tourism Training Australia (TTA). This was one of only four awards in the national TTA Tourism and Hospitality Trainers' Awards.
Student awards
- Antony Campbell-Apprentice Cook of the Year, Best Second Year Apprentice and Gold Medal in the 2006 Victorian TAFE Apprentice Cook of the Year Awards
- State-wide Developing Tourism Leaders Awards. Kangan Batman TAFE students have scooped the prize pool each year since first entering in 1999. Our students have won the first prize of an $8,000 overseas study tour three times.
